Give the classic French madeleine a fresh and summery twist. This recipe combines the deep, warm flavors of vanilla and butter with ripe strawberries and fresh lime zest. The cakes are baked in characteristic shell molds and covered with a light, tart strawberry glaze that sets as a very thin, crisp, and glassy layer on the surface.

The secret to the perfect madeleine

To achieve the perfectly high "hump" on your madeleines, a small temperature shock during baking is required. By whisking the egg mixture until light and airy and allowing the batter to cool slightly before it hits a hot, greased madeleine mold, the cakes will rise perfectly in the oven. The result is a spongy, light, and elegant cake that will adorn any cake table.

Ingredients

Madeleine batter:

  • 250g All-purpose flour

  • 135g Sugar

  • 110g Unsalted butter (melted and cooled)

  • 5g Baking powder

  • 4 pcs Eggs

  • 60g Strawberry purée (blended and sieved)

  • 1 pc Organic lime (zest only)

  • ½ pod Vanilla bean (seeds from this)

  • To taste Strawberry flavoring and a few drops of red food coloring

Strawberry & Lime Glaze:

  • 50g Strawberry purée

  • 8g Freshly squeezed lime juice

  • 120g Confectioners' sugar

Instructions

  1. Whisk the base: Whisk eggs and sugar thoroughly in a stand mixer or with a hand mixer until the mixture is completely light, thick, and frothy. This usually takes 4-5 minutes.

  2. Flavor and color: Gently fold in finely grated lime zest, vanilla seeds, strawberry flavoring, and red food coloring into the egg mixture.

  3. Add the fruit: Stir the strawberry purée into the mixture with gentle movements.

  4. Combine the batter: Sieve the all-purpose flour and baking powder together. Fold the dry ingredients into the egg mixture in a couple of stages with a rubber spatula until the batter is just homogenous.

  5. Fold in the butter: Pour the melted (but absolutely not hot) butter into the batter in a thin stream, while gently folding the batter until it is shiny and smooth.

  6. Prepare and bake: Transfer the batter to a piping bag. Carefully grease your madeleine mold with butter (even non-stick molds benefit from this to get a crispy edge). Pipe the batter into the molds – fill them about ¾ full.

  7. Baking: Bake at 180 °C (convection) for approximately 7–8 minutes. The cakes should spring back when you gently press the middle.

  8. Make the glaze: While the cakes are in the oven, stir together strawberry purée, lime juice, and confectioners' sugar until you have a completely smooth and pourable glaze. Adjust with a little extra confectioners' sugar or lime juice if necessary, so it is easy to brush with.

  9. Glazing and finish: Remove the cakes from the oven and immediately turn them out of the mold. Immediately brush the warm shell side with a thin layer of strawberry glaze. Return the cakes to the oven for exactly 1 minute – this will make the glaze "coat" the cake and set completely crisp and glassy.

Tips for the best result

  • Chill the batter: If you have time, let your piping bag with batter rest in the fridge for 1 hour before piping it into the molds. The encounter between the ice-cold batter and the hot oven intensifies the temperature shock that makes the cake rise in the middle and gives it the perfect profile.

  • Use the right mold: A metal mold provides the sharpest heat distribution and thus the crispiest edges, but if you use a silicone madeleine mold, make sure to place it on a cooling rack instead of a baking sheet to ensure optimal air circulation.

  • Fresh vs. frozen berries: You can easily use frozen strawberries for your purée. Give them a quick boil, blend them until completely smooth, and press the mixture through a fine sieve to remove small seeds from both the batter and the fine glaze.
