Ingredients for Rhubarb Mousse

- 300 g cold rhubarb puree

- 75 g rhubarb puree

- 38 g sugar

- 14 sheets Dr. Oetker gelatin (approx. 25 g gelatin)

- 240 g cream

How to Make Rhubarb Mousse

Step 1 – Prepare the cold rhubarb puree

Place the 300 g rhubarb puree in a bowl and refrigerate.

Step 2 – Soak the gelatin

Place the gelatin sheets in cold water for at least 10 minutes, or until completely soft.

Step 3 – Heat rhubarb and sugar

Heat the 75 g rhubarb puree and sugar in a saucepan until the mixture just reaches boiling point.

Step 4 – Add gelatin

Remove the gelatin from the water, squeeze out excess water, and add it to the hot rhubarb mixture. Whisk well until the gelatin is completely dissolved.

Step 5 – Mix with the cold puree

Pour the hot mixture over the cold rhubarb puree and stir well to avoid lumps. The cold puree helps to quickly lower the temperature and gives a more stable mousse.

Step 6 – Let the mixture set slightly

Return the rhubarb mixture to the refrigerator until it begins to set lightly along the edges and develops a slightly jelly-like consistency.

Step 7 – Fold in the cream

Whip the cream to a consistency slightly thicker than yogurt. Gently fold the cream into the rhubarb mixture without knocking too much air out of the mousse.

Step 8 – Fill molds

Fill the mousse into silicone molds or desired dessert molds using a piping bag for a more precise result.

Step 9 – Freeze the mousse

Freeze the mousse at -21°C until completely firm. Then remove the mousse from the mold and let it thaw in the refrigerator before serving.

Step 10 – Serving

Serve the mousse lightly thawed for the best creamy texture and fresh rhubarb flavor.
