Ingredients for Yogurt Fromage
- 225 g egg whites
- 150 g sugar
- 325 g cream (1)
- 50 g cream (2)
- 6 sheets gelatine
- 750 g yogurt (preferably full-fat yogurt)
- 50 g lemon juice
How to Make Yogurt Fromage
Step 1 – Prepare the ingredients
Weigh out the yogurt and let it temper slightly at room temperature. Soak the gelatin in cold water for at least 10 minutes.
Step 2 – Whip meringue
Whip egg whites and sugar to a light and stable meringue in a stand mixer.
Step 3 – Whip the cream
Whip the 325 g cream into a light foam. The cream should be soft and airy without being too firm.
Step 4 – Melt the gelatin
Warm the 50 g cream in a small saucepan. Squeeze out excess water from the gelatin and stir it into the warm cream until completely dissolved.
Step 5 – Make the yogurt base
Stir a small amount of yogurt together with the warm cream mixture to temper the mass. Then fold in the rest of the yogurt and season with lemon juice.
Step 6 – Fold in meringue
Gently fold the yogurt base together with the meringue to maintain as much air in the mixture as possible.
Step 7 – Fold in the cream
Finally, fold the lightly whipped cream into the mixture until the fromage is uniform and airy.
Step 8 – Fill molds or containers
Distribute the fromage into silicone molds, dessert glasses, or containers. Fill approximately ⅔ full for a beautiful and uniform result.
Step 9 – Let the fromage set
Refrigerate the fromage until it is completely set and has a stable consistency.
Step 10 – Serving
